What are low carb tortillas generally made with?

While conventional tortillas are made from mostly wheat flour or corn flour, low carb tortillas generally use whole wheat flour combined with wheat gluten (protein) and high fiber ingredients.

Adding protein and fibrous components lowers the net effective carbs and glycemic load of the tortillas. In other words, it makes the low carb tortillas keto friendly.

What’s the catch?

These added ingredients affect the products’ taste and texture. Anything that departs from the traditional tortilla taste is probably going to be viewed as negative by most. However, low carb tortillas have been around for a while now and producers have iteratively improved upon their formulations over time.

Low carb flour tortillas are at a point in their evolution where they taste very similar to standard flour tortillas. That’s where the balance between the various added ingredients comes into play. And this is how the low carb tortilla brands differentiate themselves.

Wait, crunchy? Yep, low carb tortillas fry up very well. As a bonus, you can also choose a better-for-you frying oil, such as avocado oil, which injects a seriously rich taste via keto-friendly fats.

Or, maybe you want to BYOT to Chipotle and turn your burrito bowl into a real burrito? (No judgment!). The tortillas come in various sizes and can add some missing texture to your burrito bowl.

Are there actual corn tortillas that are low carb?

This is the only option we’ve found and we are glad we did! Now, we like to use this whole line of products religiously.

Susalia Corn and Nopal Tortillas

These have the taste of corn that we all know and love, but use nopal powder as an additional binder. Nopal is the prickly pear cactus and contains much lower carb content than corn. By using both corn and nopal, these corn tortillas are only 4g net carbs per tortilla.

That’s on par with the other tortillas below, yet this has actual corn flavor. That makes these great for street-style tacos, tostadas, corn tortilla chips and anywhere you may be missing true corn tortillas.

The wheat ones are all very similar

At the end of the day, most of the wheat-based low carb tortillas are pretty interchangeable to us– you really can’t go wrong with any of them. If you’ve had a whole wheat tortilla before, the texture of low carb tortillas will be very similar.

They’re generally a little thicker in consistency (and some are a bit chewier) than normal flour tortillas. The good thing is since the ingredients are so similar, your choice is likely going to come down to cost, freshness, availability.

And since this is a keto and low carb-centric site, net carbs plays a significant factor.

Again, we’re hard-pressed to find major differences in taste between most brands. That’s even more true once you’ve heated up the tortilla or used it as a wrap. It’s not supposed to stand out– and that’s a good thing!

Some Serving suggestions

Tortilla/Wrap Substitute: As a wrap replacement, quesadillas, soft taco with your favorite meal…or fry them up to make these low carb tortillas chips.

Tortillas Chips: In a frying pan, heat enough Avocado Oil (it’s safe for high heat) to cover the tortillas. Cut your tortillas into triangles and fry to your desired texture, flipping at least once. These come out nice and crispy!

TIPS: We use either Chosen Foods Avocado Oil or Primal Kitchen Avocado Oil

Note: If you use coconut oil instead, it will make the chips taste a bit like coconut.
